I love Greek salad. I got this recipe from my sister in law and changed it a bit by removing the feta cheese to suit my dietary needs. Last summer, my mom and I made this almost every day with heirloom tomatoes from her garden.
Katy’s Greek Salad For Hashimoto’s
Ingredients
- Olives
- Cucumber
- Avocado
- Tomato
- Green pepper
- Red onion
- 1 tablespoon extra virgin olive oil
- 1 tablespoon lemon juice
- 1 tablespoon dried basil
Directions
- Dice all of the vegetables
- Mix the lemon juice, olive oil, and basil, and toss over the salad.
TIP: May add boiled eggs, chicken, or salmon for protein.

If I’m honest I never cared much for feta cheese so that’s an easy sacrifice for me! Using the juice and oil makes so much sense to replace the store’s dressings (I never know what’s in those things!)
