Hashimoto’s patients are often deficient in Ferritin, and this may result in residual symptoms like fatigue and hair loss. See my post about Ferritin here.
Liver is one of the richest sources of Iron and may be helpful in restoring Iron and Ferritin levels, but it not most people’s favorite.
Here is a liver recipe I make at home.
Ingredients
- 1 tablespoon Duck fat or coconut oil
- 1 lb liver
- 1 onion, chopped
- 1 garlic clove, crushed
- ¼ cup chopped basil
- 4 teaspoons apple cider vinegar
- Lemon juice from 1/2 of a lemon
- 1 tablespoon cinnamon
- salt/pepper to taste
Directions
- Fry the liver in a pan with the duck fat or coconut oil until cooked through.
- Place in food processor and blend until smooth.
- Form mixture into a ball and let chill for one hour.
- Slice in thick slices and garnish with little-fermented pickles 🙂
Tip: Helpful to eat with a cup of hot water with the juice of a lemon or apple cider vinegar to improve digestion.
