These banana pancakes are a delicious gluten free treat made with real bananas and eggs.
Ingredients
- One banana
- One egg
- Extra virgin coconut oil
- Strawberries for garnishing
Directions
- Blend banana and egg in mixer until batter consistency achieved (30 sec – 1 minute)
- Melt coconut oil in pan
- Pour batter into pan
- Cook for 2-3 minutes and then flip cooking for additional 1-2 minutes
- Cut strawberries in half to garnish
TIP: putting a cover over the pan will even out the cooking process and help prevent destruction of pancake upon flipping

I have read that if you have Hashimoto’s you shouldn’t eat bananas. Do you know about any research that supports eating or not eating them?
