These muffins are not only delicious but gluten-free, sugar-free, can stabilize your blood sugar and filled with antioxidants!
Ingredients
- 1 & 1/4 cup almond flour
- 1/4 cup flax seed flour (optional)
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 cup unsweetened apple sauce
- 2 eggs*
- 3 ripe mashed bananas
- Optional-may choose to add one or more of the following
- 1/2 cup shaved coconut
- 1/2 cup blueberries
- 1/2 cup walnuts
- 1/4 cup poppy seeds
- 1 tablespoon unsweetened cocoa powder + 1/4 cup honey
Directions
- Mix all ingredients
- Bake for 45 minutes to 1 hour at 350 degrees Fahrenheit or until tops of muffins are lightly browned, one hour if baking banana bread.
*If avoiding eggs: replace 1 tablespoon of apple cider vinegar for each egg

Thank you Dr Wentz for everything! I discovered you on the Broken Brain video after by allergist, Dr. Susan Cocke (who knows you) recommended Dr. Hyman. I refer to your 6 supplements for hashimoto’s all the time and currently take vitamin D, vitamin B12/Folate, magnesium, benfomax, and eat brazil nuts for selenium because I can’t tolerate multi-vitamins or the Pure selenium supplement.
I made these muffins tonight and they were delicious but I had some problems. I buttered my muffin pan but they all stuck (which hasn’t happened with other muffin recipes). Do you use a silicone muffin pan for these?
Also they weren’t cooked in 45 minutes. I kept cooking and checking on them every 10 minutes but it took at least 40 more minutes and then the tops were overdone. I’m wondering if the volume of bananas affects the recipe? I used small-medium sized bananas.

Thanks for this recipe, Dr. Wentz. Can’t wait to try it. I am shopping for mini muffin pans and see ones that are made of aluminized steel, silicone, non-stick Teflon-like material, etc. Which in your opinion is the least toxic? Would love your recommendation on a brand, if you have a favorite!

Yelda – thank you for sharing! ❤️ I recommend looking for ceramic-coated cookware, as they are safer options compared to those coated with toxic Teflon. Make sure your ceramic cookware is “safe”, as some can leach lead and cadmium when cooked at high temperatures. The safest cookware I’ve found is 100 percent ceramic cookware from Xtrema.
