Ingredients
Crust
- 2 cups almond flour
- 1/2 cup of melted coconut oil
- 4 tablespoons of honey or maple syrup
- 1 teaspoon vanilla extract
Filling
- 1 26oz jar of baked apple chunks and slices
- 1 cup blueberries
- 1/2 cup blackberries
Directions
- For the crust: Mix almond flour, coconut oil, honey/maple syrup and vanilla in a mixer. Use mixture to fill out a round pie pan.
- For the filling: Mix all ingredients and add into the pie crust.
- Preheat oven for 350F
- Bake for 30-45 minutes

Desserts have been the hardest thing for me to get around with the paleo diet! Finding simple recipes like this are just what I need! I think I’ll make my own filling though. What Cheryl mentioned about pie filling does have me wondering.
